Dairy, Gluten and Egg-Free Overnight Oats Breakfast Recipe
During my switch over to a gluten-free, dairy-free and egg-free diet for the next few months, breakfast has been a struggle. I of course turned to Pinterest and saw a ton of recipes for overnight oats. After looking at a ton of recipes, I created my own that ended up tasting delicious!
I used almond butter, but you can use whichever you’d like! I like Justin’s almond butter.
I just used one cup of oats that I had from Hy-Vee. 🙂
I added some organic, Mama Chia seeds that I found at Natural Grocers!
I used one of the unflavored, single-serve packets (10 g) of collagen peptides from Vital Proteins!
In the morning, it gains a bit more substance! Everything mixes together for a tasty breakfast!
This recipe filled up one jar for me!
Overnight Oats Ingredients
- Rolled Oats -1 C
- Almond Butter- 2 tablespoon
- Coconut Milk-1 C
- Stevia -1 packet (.2 oz)
- Maple syrup- 1/2 tablespoon
- Chia seeds- 1 tablespoon
- Unflavored Vital Proteins- 1 single serve packet (10 g)
- Strawberry jelly- 1 tablespoon
All you need to do is pour all of the ingredients, except for the jelly, into the jar! Make sure it’s stirred or shaken well. Then store it in the fridge overnight! In the morning, all you have to do is add jelly or other toppings! Along with the jelly, I’ve also added some dark chocolate chips to it as well- I’d definitely recommend this if you have some healthy jelly or chocolate chips that you can add!
